Whole-grain protein toast sandwich with pouched eggs, salmon, cream cheese and avocado

Ingredients for 2 servings:

  • 4 slices of high-protein Vita Fitness bread
  • 125 g cream cheese
  • Chives, finely chopped
  • 2 avocados, thinly sliced
  • 4 slices of salmon
  • 4 large fresh eggs
  • Lime
  • Fresh salad (Valeriana, cherry tomatoes and Parmigiano flakes)


Cook the pouched eggs by boiling water in a large pot and then reduce the heat until very small bubbles are formed in the water. Put some wine vinegar. Break the eggs one by one and put them in separate glasses. Stir the water with circular movements to obtain something like a vortex. Pour the eggs carefully in the water and boil for about 3 minutes. Take them out with a griddle and let them drain on a paper towel.

Arrange the slices in a plate (2 slices per serving), spread the cream cheese mixed with the chives, arrange the slices of avocado, then the salmon and put the pouched egg on top. Season with salt, black pepper and chopped chives and serve with fresh salad with lime.
