Panzanella with mozzarella

Ingredients for 2 main course servings or 4 appetiser servings:

  • 2 salad bowls with a mix of cherry tomatoes (red, green, yellow, orange)
  • 2 mozzarella balls
  • ¼ tea cup of olive oil
  • 2 tablespoons of balsamic vinegar
  • ½ teaspoon of salt + black pepper
  • 1 clove of crushed garlic
  • Chilli (optional)
  • Whole-grain crostini from Vita Balance with quinoa and linseed – bread, olive oil, pepper mix and coarse sea salt
  • Ripe figs for serving

Directions:

Cut the tomatoes into 2 or 4 pieces, depending on their size. Some types of cherry tomatoes may be substituted with different varieties of regular tomatoes. Make the dressing from the olive oil, balsamic vinegar, salt, black pepper and garlic. Add chilli, if you want. Pour the dressing on the tomatoes, distribute them into separate salad bowls and put 1 (or ½, if large) mozzarella ball.

Serve the salad with whole-grain crostini made from several slices of Vita Balance bread sprinkled with olive oil and crushed sea salt and pepper mix baked in the oven. Add two ripe figs cut into half to the salad.
