Chicken sandwiches

Boil 1 large piece of chicken breast for 10 minutes and cut into large pieces. Mix the chicken with 2 tablespoons of mayonnaise and 2 tablespoons of yoghurt in a bowl. Season with curry powder, salt and black pepper. Sprinkle with parsley and mix well.

Spread some butter on 2 slices of whole-grain Vita Balance bread with quinoa and linseed, cover with fresh salad and distribute the mixture on them. Put the other two slices on top. Cut the sandwiches into half and serve (you can also garnish them with green salad).
